Alpen Muffins

What you need

  • 210g wholewheat flour
  • 100g Alpen original muesli
  • 85g cup lightly packed brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 225g mashed bananas
  • 2 eggs, room temperature
  • 225g unsweetened yogurt
  • 56ml butter, melted
  • 88g raisins, soaked

What to do

  • Preheat oven to 175 degrees celcius. Line muffin pan with paper cups.
  • Whisk flour together with Alpen original museli, sugar, baking powder and baking soda in a large bowl.
  • In another bowl, combine eggs, yogurt, butter and bananas until well blended. Add this mixture to dry ingredients.
  • Stir until just combined. Do not over mix. Add raisins.
  • Spoon batter into muffin pan and bake for 25-30 minutes.
  • Cool to room temperature on a wire rack before serving.
