Alpen Banana Bread with Almond Butter Swirl and Muesli Crumble Topping
Serves 10 slices
Ingredients:
• 2 ripe bananas (about 240g mashed)
• 150g plain flour
• 50g almond flour
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp cinnamon
• ¼ tsp salt
• 2 large eggs (100g)
• 120g plain yogurt (or Greek yogurt)
• 50g melted coconut oil or unsalted butter
• 1 tsp vanilla extract
• 70g dark chocolate chunks (optional)
• 50g chopped walnuts (optional)
• 100g Alpen muesli (for stirring through)
For the almond butter swirl:
• 3 tbsp almond butter (smooth, no added sugar)
For the muesli crumble topping:
• 50g Alpen muesli
• 2 tbsp coconut oil (melted)
